1. Application in food
Sodium alginate is used to replace starch and gelatin as the stabilizer of ice cream, which can control the formation of ice crystals and improve the taste of ice cream. It can also stabilize mixed drinks such as sugar sorbet, ice sherbet and frozen milk. Many dairy products, such as processed cheese, whipped cream, and dry cheese, utilize sodium alginate's stabilizing action to prevent the adhesion of foods to packaging, and serve as a coating for emulsified accessories to stabilize and prevent cracking of frosting pastry.
Sodium alginate is used as a thickening agent in salad (a kind of salad) dressings, puddings (a kind of dessert), jams, ketchup and canned products to improve the stability of products and reduce liquid leakage.
Adding sodium alginate in the production of noodles, vermicelli and rice noodles can improve the cohesiveness of the product structure, make its tensile strength, bending degree, reduce the breaking rate, especially for the flour content is low gluten, the effect is more obvious. The addition of sodium alginate in bread, pastry and other products can improve the uniformity of internal tissue and water retention, and prolong the storage time. The addition of thermal fusion protection layer to frozen sweet products can improve the performance of fragrance escape and melting point.
Sodium alginate can be made into a variety of gel food, maintain good colloidal form, does not occur seepage or shrinkage, suitable for frozen food and artificial imitation food. 2. Application in pharmaceutical preparations
Sodium alginate was included in the United States Pharmacopoeia as early as 1938. Alginate was introduced into the British Pharmacopoeia in 1963. Alginate is insoluble in water, but it expands when put in water.
Traditionally, therefore, sodium alginate is used as a binder for tablets, while alginate is used as a disintegrator for quick-release tablets. However, the effect of sodium alginate on the properties of tablets depends on the amount put into the prescription, and in some cases, sodium alginate can promote disintegration of tablets. Sodium alginate can be added during granulation, rather than in powder form after granulation, making the process simpler. Compared with the use of starch, the mechanical strength of the prepared sheet is greater.
Sodium alginate is also used in the production of suspensions, gels and concentrated emulsions based on fats and oils. Sodium alginate is used in some liquid medicines to enhance viscosity and improve suspension of solids.
3. Application in printing and spinning industry
Sodium alginate in printing and dyeing industry used as reactive dye color paste, better than grain starch and other pulp. The printed textile pattern is bright, the line is clear, the color is high, the color is uniform, the permeability and plasticity are good. Seaweed gum is the best paste in modern printing and dyeing industry. It has been widely used in the printing of cotton, wool, silk, nylon and other fabrics. 4. Application in the pharmaceutical industry
