Food-grade Sodium Triphosphate Dodecahydrate (TSP), with the chemical formula Na3PO4·12H2O, is a white or colorless crystalline powder that is prone to efflorescence. It is highly soluble in water but insoluble in organic solvents. TSP's aqueous solution exhibits alkaline properties, with a pH value of 12.1 for a 1% solution. Its relative density is 1.62, and its melting point is approximately 73.4°C (alternatively stated as 75°C in some sources). TSP's high purity and stability make it a vital component in the food industry.
