α- Amylase, also known as starch 1,4-dextrinase, is officially named α- 1,4-D-neneneba glucan gluconenenebb glucoside hydrolase, when acting on starch, can be cut from the inside of starch, glycogen, oligomer or polysaccharide molecules in a random manner α- Maltose, oligosaccharide and glucose are produced by 1,4-glucoside bond, which is one of the most widely used enzymes in industrial production; In addition, its hydrolysis is located between the chemical books in the middle α- The probability of 1,4-bond is greater than the probability of hydrolysis at the end of the molecule, which cannot hydrolyze Amylopectin α- The 1,6 bond cannot be hydrolyzed immediately adjacent to the 1,6 branching point α- 1,4-bond and Maltose, but can be hydrolyzed to contain 3 or more α- 1,4-neneneba glycosidic bond oligosaccharides. Due to the reduced terminal glucose residue C1 carbon atom of the hydrolysis product α Configuration, hence the name α- Amylase.
